THE RUM

Our rum begins with molasses from the last operating sugar mill in Texas. We prepare the molasses by removing numerous insolubles and unwanted flavors via a proprietary process. Our yeasts have been specifically selected for the production of a premium silver rum during fermentation. These yeasts produce less ester, thus ensuring a smoother and more predictable palate.

After allowing the appropriate time for fermentation, we distill using reflux column stills to achieve a cleaner, higher proof pure rum than can normally be produced with a traditional pot still. The rum is drawn slowly from our stills, giving plenty of time for the product to increase its quality and purity. At this point, the product is blended with filtered Hill Country water, and then double filtered through activated carbon.

The result of these processes is our Treaty Oak Platinum Rum - a beverage designed to compete with other top rums and vodkas alike. While the overall flavor is smooth and subtle, hints of citrus, vanilla and nutmeg may be found on the finish. It is perfect in traditional rum cocktails, excellent in drinks usually reserved for vodkas and superb served on its own.
